Strawberry Cobbler

Just In Time For Summer
Strawberry Cobbler

3 cups fresh strawberries, cleaned, stem removed and diced
1/4 cup sugar
1 t. lemon juice
1 cup flour
2 t. baking powder
1 t. salt
1/2 cup sugar
1 cup milk
1/2 t. vanilla
1 stick butter, melted

Preheat oven to 350 degrees F. In a mixing bowl, place strawberries and sugar. Combine gently and let sit for about 10 minutes. Add the lemon juice and stir. Continue to let the mixture marinate while you prepare the batter.

Mix flour, baking powder and salt in a mixing bowl. Add the milk. Then pour in the melted butter and vanilla. Stir to combine the ingredients.

In a greased baking pan, either 8" x 8" square or round, pour in the batter. Spoon the fresh berries on top of the cobbler batter. Do not stir. Bake for about 30-35 minutes. Serve warm, and with love.
